The warm aroma of turmeric, light color and ginger/pepper taste are highly appreciated by cooks in Asian countries. It is also known as spice, giving curry powder a distinctive color.
Turmeric comes from Southeast Asia, but is grown in large quantities in India and Indonesia. The region and the city of Alleppy in southwestern India produce two varieties of turmeric for the American market. "Fingers" are branches that separate from the rhizome and cut into pieces 2.5-7.5 cm long. "Slivers and bullets" are pieces of the main root. They are cheaper, but usually have a lower quality (taste, color, volatile oil content), more fibrous and are crushed with difficulty.
